take it up a notch: to improve or increase the level of effort, quality, or intensity
Insects are eaten in 128 countries around the world. The EU has approved four types of insects as food, and Australia has approved three. In a bold move, Singapore is taking it up a notch. They have approved 16 types of insects for human consumption. Some of the insects include crickets, grasshoppers, and mealworms.
Some restaurants in Singapore are already preparing to serve insect dishes. A restaurant chain, House of Seafood, will offer sushi with silkworms and crickets. Other insect products will include insect oil, pasta with insects, and protein bars.
The United Nations says insects are a good source of protein and could help with climate change. Insects are easier to farm than animals because they need less space, water, and food. Unlike cows or chickens, insects use fewer resources while producing the same amount of protein.
